Winemaking
These grapes were hand picked into small bins. Each vineyard was fermented separately in ¾ ton lots to maximize extraction. The individual lots were finished in neutral, one year old Burgundy barrels, and only 3% new American oak, to complement the big berry fruit. The final blend was racked together early, to allow time to marry, yet be ready for a spring release. The wine was bottled in April 2007. The final pH was 3.85, with 14.9% alcohol. There were 510 cases produced.
